CRAB CURRY (DURBAN STYLE)

Seafood is a popular protein enjoyed by many.  And there is just something about the way, people living along the coast prepare seafood.  Surekha shows us how to make Crab Curry, just like the Indian Durbanites do.

A Spicy and Delicious meal, that will leave you licking your fingers.  *Note, best have some kitchen towels at the ready, when you tuck in*

CRAB CURRY

Ingredients
2 kgs CRAB
2 large onions sliced
6t o 8 large tomatoes grated
1 teaspoon crushed ginger and garlic
1 tablespoon kashmiri chilli powder
2 tablespoons mix masala
Salt to taste
12 green chillies
2 teaspoons liquid tamarind
Method:
~ Fry onions in 2 tablespoons oil until translucent 
~ add green chilli tomatoes and all the spices and tamarind cook on high stirring continously for approximately 5 minutes 
~ add crab and salt stir cover and simmer for about 40 minutes 
~ after 40 minutes add half a cup of water and simmer for another ten minutes . 
~ Remove from stove and garnish with coriander

COFFEE TART

Ingredients:

Base Ingredients:
250g Nuttikrust or Tennis biscuits, crushed
90g Stork Bake margarine, melted

Filling Ingredients:
1 tin evaporated milk 
2 egg yolks
4 tsp instant coffee dissolved in 1 dessertspoon boiling water
3 tbsp cornflour
3/4 cup brown sugar
60g Stork Bake margarine

To Decorate: 
Whipped cream

Method:

Base Method:
Mix the melted Stork Bake margarine and biscuit crumbs.
Line the base and sides of a greased pie plate.
Place in fridge to cool.

Filling Method:
Warm the evaporated milk, egg yolks and coffee in a saucepan.
Add the cornflour mixed with ½ tin cold water. 
Dissolve the sugar and Stork Bake margarine, add to the milk mixture and heat it, stirring all the time until it is thick.
Pour into biscuit shell and chill.
Decorate with whipped cream.
Tip: Keeps well in the fridge if covered with Klingfilm

Homemade Beef Patties

Holidays are almost upon us in South Africa.  Time to practise some easy, homemade Beef patties, that would prove a hit with your kids.  Take a look at this recipe, kindly shared on by Raeesa Abdool Carim, one that has already been tried and tested by a few other group members as well.  A must try.


Homemade Beef Patties by Raeesa Abdool Carim

1 kg beef mince
Season with salt, 

pepper, 
aromat, 
dried parsley, 
italian herbs and 
peri peri spice. 
Add ginger garlic, ground green chillies, dhania (Coriander) and 1 egg. 

Mix and form into patties and keep in fridge. 
Remove from fridge about 30 mins before cooking. 
Add a little oil to frying pan and fry on meduim heat.
